I have a small confession to make. I LOVE burritos. I think it is one of the only foods I could eat daily and not be sick of it. The problem is, most burritos are calories bombs! Not good if you’re trying to lose weight! However, with the right ingredients, you can eat burritos and lose weight! Here are the ingredients I use to make Healthy Chicken Burritos to Meal Prep for Weight Loss.
Getting Started
You can put whatever items you’d like in your burritos, but these are the ones I make weekly. Here is what I use:
- Chicken breast (cooked in a crockpot with salsa)
- Fat-free refried beans
- Fat-free Mozzarella Cheese
- Large burrito-size tortillas
- 1 guacamole cup
Another side benefit is the amount of money I save. If you buy these burritos at a restaurant, they would be about 5-8 dollars. Each burrito costs less than a dollar by meal prepping and freezing the burritos.

Preparing the burritos
I like to make a workstation sort of like Chipotle restaurant when preparing my burritos. First I take all of my cooked ingredients into separate bowls. I then spoon or measure the amount of each item and place it in the center of the burrito
Once all my ingredients are in the burrito. I fold the two sides, so they touch the middle. While folded, I pull the opposite side and folder over the other two sides. I tuck that side in and continue to roll tightly.

Also, remember not to overstuff your burrito too much, or the tortillas will tear.
I use the same bag the tortillas came in to store in the freezer.


Reheating at work
When I started meal prepping burritos, I was concerned they wouldn’t come out well after being frozen, especially at work. Here is the best way I have found to reheat the frozen burrito
First, make sure to take 1 burrito out of the freezer the night before and put in the refrigerator. Once you get to work and are eating lunch the burrito should be thawed. Wrap the burrito in a wet paper towel and microwave for two minutes
Crispy tip:
If you have access to a microwave and toaster oven at work, you can put the burrito into the toaster oven after its done cooking in the microwave and toast for 1-2 minutes to give the crust a nice crisp.
If you have 30 minutes at home, this is the best way I have found to reheat the burritos.
First, make sure the burritos are thawed like you would taking them to work.
Then set a stove pan to low heat, place the thawed burrito in the pan, and cover. Cook for 15 minutes. Flip the burrito and cover again. Cook for another 15 minutes. The burrito should be nice, crispy, and hot!
