Chia seeds benefits are numerous and are considered one of the healthiest foods on the planet. It is full of nutrients that can bring important benefits to the body, brain and general health. Its scientific name is Salvia Hispania.  It is an herbaceous plant, not a grain, like most people think.

Although it could be said that the chia “discovery” is recent, its history goes back to pre-Columbian times in central and south Mexico, Guatemala and Nicaragua. There is a theory that the word “chia” comes from the nahuatl word chian, which means oily.

The Aztecs used chia in different nutritional and medicinal preparations, as well as in the elaboration of cosmetic ointments. It was a source of energy for long voyages. Combined with corn, this was healthy nutrition for the soldiers. A typical meal was prepared with amaranth seeds, toasted chia, agave nectar and corn flour.

Toasted chia flour was used in the preparation of a popular refreshing and nutritious drink.  This is a custom that with variants today persists in Central America and is called “chia fresca” (water, lemon and chia).

Today chia is cultivated in Mexico, Central America, Peru and Argentina.  Thanks to its nutritional values, more people are taking it today.
